Chef De Cuisine Requirements & Qualifications
- 2+ years as Executive Chef in a high-volume ($8M+ annual sales) fine dining environment
- Strong background in Italian cuisine - menu development, execution, and sourcing
- Proven ability to manage kitchen operations at scale, including labor and food cost controls
- Authorized to work in the U.S.
- Experienced in training, mentoring, and retaining kitchen talent
- Strong organizational and administrative skills
Chef De Cuisine Must Haves
- Leads from the front; hands on, visible, and engaged during prep and service
- Upholds a clean, professional, organized, and system-driven kitchen
- Creates and enforces prep lists, labeling, and rotation procedures
- Conducts consistent line checks and quality control across all stations
- Brings a positive, solutions-oriented attitude to daily service and team leadership
- Balances quality and speed in a high-volume setting without compromising standards
- Strong tenures in background - 2 years minimum in previous roles
Preferred Background & Skills
- Culinary degree or formal training (preferred but not required)
- Experience working in the New York market or comparable fine dining scenes
- Bilingual (Spanish/English) a plus
- Familiarity with BOH platforms for ordering, inventory, and scheduling
